Date & almond energy bites

Sometimes the kindest thing is a snack you don't have to think about. These come together in a food processor, keep for a week, and slip into a bag for whenever hunger shows up.

Grazing matters when three big meals feel like too much. Keeping something calorie-dense within reach — like these — makes the gap between meals easy to fill.

Ingredients

  • 200g medjool dates66 kcal, pitted
  • 100g almonds164 kcal
  • 2 tbsp almond butter196 kcal
  • 2 tbsp rolled oats150 kcal
  • 1 tbsp cocoa12 kcal powder
  • Pinch of salt
  • Desiccated coconut35 kcal, to roll

Method

  1. Blitz the almonds in a food processor until coarse.
  2. Add the dates, almond butter, oats, cocoa and salt, and blend until the mix clumps together.
  3. Roll into 12 small balls, then roll each in coconut.
  4. Chill 30 minutes to firm up. Keep in the fridge for up to a week.

Press a whole almond or a square of chocolate into the centre of each for a little surprise.

Make it your own

  • Swap cocoa for cinnamon6 kcal and add raisins85 kcal for a different mood.
  • Roll in crushed nuts or seeds instead of coconut.
