Cardamom mango lassi with coconut milk

Easier-to-swallow option below ↓
mango-coconut-lassi, spiced-top

Some days a plate of food is more than you can face, and a cold glass is about right. This lassi blends full-fat yogurt75 kcal, coconut milk445 kcal and frozen mango200 kcal into something smooth and gently sweet, with a little cardamom to keep it interesting. There is no chewing and no cooking involved, and the glass comes in around 580 calories.

Frozen mango does double duty here. It chills the drink without watering it down the way ice would, and it blends thicker than fresh fruit, so the lassi feels substantial without being heavy.

If even a full glass feels ambitious, pour half now and keep the rest covered in the fridge. It holds for a day, and finishing it in two sittings still counts.

Start with the quarter teaspoon of cardamom and taste. It should sit quietly behind the mango rather than out in front of it.
